Review: hirsch's knishes our family store ..our entire family and almost every kid in the area worked there. used in the "boys of the second street park" my grandmother Lena started it in 1949. Our knishes were mostly made by Frank Sheer, my dad, and Marv and I ..They were real European knishes as Jacob and Lena were from Transylvania. The trademark paper-thin dough. Potato, Kashe, and cheese with fruit. Some days we sold 5000, hundreds of cups of buttermilk.there was no comparison.Stahl had Puerto Rican bakers and no match for "Froyim" Our was best the way people had them in Europe before the war. Mrs Stahl's wasn't really a knish, think dough and bland.. NY was always about tradition. In NY AT A DELI Jewish, Italian, Italian, and same for Chinese..The author contacted Marv in NY and me here in Ca. Both spoke in length, gave her photos from the era.
The Knish book was like an ad for Mrs. Stahl, and ok item but not really a knish. People who didn't know a knish from a burrito liked them. We sold more and their workers bought real knishes at Hirsch's other relatives in our family copied but they couldn't do with dough-like "Froyim"[ Jerry's in coney and Rockaway. Sam's first in Coney then Brighton was a phony Jew, and not to be trusted.
If your writing about knishes then writes about a real knish. The author tried had information but lost her way. The area had many knish places 7 that I remember..now I bring water from Brighton and make them here for friends. Often when visiting NY we gather at David Hirsch's apartment, make real knishes as the aroma takes us on a memory ride..

Review: Growing up in New Jersey, we got our knishes at Tabatchnick's (now, like the knish, available in frozen), and it was only later when I discovered my roots in New York (and still later, like Ms. Silver, in Bialystock), that I began to see the connections between that warm, comforting feeling in the stomach only a knish can induce and the long rich history, the entire gestalt, from whence it came. This book continues that process for me, but while there is ample nostalgia, and even sadness for the lost world, there is also a kind of John McPhee-like celebration of the minute details of a subject, for its own sake. As with McPhee, the topic is in a way just a pretext for good writing, intelligence, wit, and a love for the particulars. It's the going back and forth between foreground and background that produces the effect. Reading Knish, I was reminded of Tabatchnick's, but I also got the same thrill I feel from Google Earth. You zoom way in on the tiniest corner of the world, a potato-filled pastry with too many calories that reminds you of your childhood, and then seamlessly and effortlessly out again, to the global context, to San Francisco, Jerusalem, Paris, Warsaw, Riga, and to a whole, global cast of characters past and present who are part of the human diaspora.--Ed Levy

Review: This is my first Knish Cookbook. It sits on my cookbook bookcase together with my kugel cookbooks.We tend to make the same recipes over & over again. This book will get me out of my rut and enable to try other interesting variations. There are so many recipes I want to try. All I need is more time to pick one and prepare it.
