In the sixth edition of the "The best French toast in Madrid" contest , organized by the Association of Artisan Pastry Entrepreneurs of Madrid (ASEMPAS), 25 French toast competed in various categories: innovative, which had nine participants; classic , in which 12 have competed, and gluten-free , which has had four.
These came from the pastry shops Adolfo Lazcano , Canale , Cercadillo , Dulce Consentido , El Riojano , Gallofa & Co , La Oriental , La Rosa , Mallorca , Manacor , Mifer , Paco Pastel , Sana Locura Gluten Free Bakery , Vanille Bakery Lab and Viena Capellanes .
The torrijas had to weigh between 80 and 220 grams and have been made with products from Madrid. The jury has valued their presentation, sponginess, texture, appearance and flavor of these desserts to award their prizes.
In the traditional way , the French toast could be made with cow's milk, wine or syrup and include lemon, cinnamon, orange, sugar, eggs, vanilla and cream and have a sugary bread base or added fat. In it, the winner has been the El Riojano pastry shop .
The award for the gluten-free category, in which the only requirement was to use local products, went to La Oriental pastry shop.
